Dinner Party + My Favorite Mushrooms (Recipe)

I spent this past weekend at one of my heart-homes, in Maryland with my best friends from college. I’m feeling sooo especially lucky this year, since I’ve already been seeing Ashley once a month, as it turns out! The girls visited me in NYC in January, Ash and I went on our ski trip in February, we just had this weekend in March, I just booked a flight down to Virginia for a weekend in April, and in May we have our annual Memorial Day camping trip.

Like I’ve said before – long distance friendship isn’t easy but we all put in the work, and its so, so worth it to be as close as ever with the girls I spent my formative years with. They know every last bit of me, every piece of my soul, every weird quirk or wacky thing I’ve ever done, and they still love me to pieces, as I do them. I’ve made some pretty terrible choices in boys over the years, but my choices in girls couldn’t be better. πŸ˜‰

This weekend was special, as we planned out and executed an absolutely beautiful dinner party. Ashley and Kyle have a sous vide maker, and while I didn’t eat any of the chicken they made, I decided I wanted to just cut up a piece (yup, vegetarian weirdo, oh well) because they wouldn’t stop talking about how soft and perfectly cooked it was. Our friendΒ Anthony ate the piece I went to town on, haha.

My contribution forΒ the dinner party was this mushroom dish I love making. I found this recipe in a beautiful memoir called A Thousand DaysΒ In Venice, highly recommend. Simple Truffle Mac n Cheese (VEGANIZED!)

In my post about going vegetarian/mostly vegan, the one thing that was keeping me from “fully” vegan was cheese. I just love cheese! Like I said before, I don’t care about other dairy, totally prefer plant based substitutes for milk, ice cream etc. But cheese is just my favorite.

Buuuut with the help of recipes like these, I’m realizing I really don’t actually need cheese as much as I would think I do. And as I have been cutting it out, almost entirely now, I’m realizing that I don’t even need to miss it.

Sweet N Spicy Avocado Toast

Avocado toast is such a staple. So delicious, so filling, so perfect. I’m always looking for ways to up my avo toast game, and my bff April told me about an avocado toast she had recently that was topped with red pepper flakes and …honey. Sound weird? Sort of, but I tried it out and ummmm wow yes, I loved it.

Organic Brownies… From a Box?!

You know when you’re in a baking mood? You see some fabulously complicated Pinterest creation and you go to the kitchen store to buy expensive pans you didn’t already have but then completely burn the carrot-pineapple cake to the point of inedibility… Or you somehow spend $48 on the ingredients and the recipe only ends up yielding 7 cookies. Hmm. (Both true stories)

This is now my little hack for those days. Meet this amazing brownie mix from the company Madhava. It tastes SO GOOD, is organic, and you would never know its from a box! This is what company has to say about this gem:

Winter Tropics: Acai Bowls

If you’ve never tried this heavenly Brazilian superfood, you are missing out.

Acai bowls are my favorite breakfast right now. You can’t beat their tropical, lush colorfulness, and they have so many amazing health benefits – my favorite of which is energy boosting. I’m not even drinking coffee these days, just making a quick acai bowl – and after downing it, I feel ready for anything!

Warm Spiked Maple Egg Nog

I’ve discovered a new favorite holiday spirit, wink wink – something called Cabin Fever, which is a maple whisky from New Hampshire. When I spotted it sitting next to Fireball in the neighborhood shop, I was brought back to last Christmas season, when i would occasionally make warm cinnamon egg nog using that.

Nowadays? No thanks to the Fireball, but I was curious to give this maple whisky a try. And the result was a really lovely twist on spiked eggnog, a perfect warm concoction to sip by the twinkling tree. Read More Β»

The Perfect Homemade Shandy

The other day I was in the grocery store, looking for a refreshing and light beer option to enjoy later that night. I was thisclose to picking out the Leinenkugel Summer Shandy, when I realized… I could definitely make a better version of this on my own. I grabbed a 6 pack of Stella’s and headed home, where I knew lemons and agave were already waiting for me.

This little recipe is SO simple and the end result is so worth it, if you’re willing to squeeze a couple lemons to have the real thing instead of whatever artificial nasties are hiding in “natural lemonade flavor”. Blegh. Read More Β»
