Simple Truffle Mac n Cheese (VEGANIZED!)

In my post about going vegetarian/mostly vegan, the one thing that was keeping me from “fully” vegan was cheese. I just love cheese! Like I said before, I don’t care about other dairy, totally prefer plant based substitutes for milk, ice cream etc. But cheese is just my favorite.

Buuuut with the help of recipes like these, I’m realizing I really don’t actually need cheese as much as I would think I do. And as I have been cutting it out, almost entirely now, I’m realizing that I don’t even need to miss it.

Avocado toast is such a staple. So delicious, so filling, so perfect. I’m always looking for ways to up my avo toast game, and my bff April told me about an avocado toast she had recently that was topped with red pepper flakes and …honey. Sound weird? Sort of, but I tried it out and ummmm wow yes, I loved it.

If you’ve never tried this heavenly Brazilian superfood, you are missing out.

Acai bowls are my favorite breakfast right now. You can’t beat their tropical, lush colorfulness, and they have so many amazing health benefits – my favorite of which is energy boosting.
